Fruit is nutritious and adds variety in taste and appearance to many baked products. It functions in two ways:

  • As a flavouring ingredient
  • As a decorative topping

Fruit is available in a wide variety of forms:

  • Fresh
  • Frozen
  • Canned and bottled
  • Preserved
  • Partially dried
  • Candied
